What is the History of the Gingerbread House?

The tradition of decorating gingerbread houses is claimed to have begun in Germany in the early 1800s. It became popular with the publishing of the not-so-Christmassy fable Hansel and Gretel.

As they approached, they observed that the structure was made of bread, coated in cakes, and the windows were made of clear sugar.

These are the words from the original fairy tale by the Brothers Grimm. It was converted to gingerbread rather than bread in later incarnations of the story. But German bakers felt the fairytale had some great ideas, and they started building gingerbread mansions. After all, why not?
